Three thousand years ago, the Chinese were the first to grind mustard seeds and to mix them with an acidic juice in order to create mustard! Since that time, production methods have evolved, and currently there are numerous products under the designation “mustard,” often made differently and with a great variety of ingredients. In accordance with very specific regulations, Chef LELARGE offers two major designations of stone ground mustard: Dijon mustard (original or strong) and old fashioned mustard.
